Tasty Tuesday

Here is a great Spring/Summer dish that will help you get in those healthy Omega 3 fats!

Grilled Salmon with Avocado Salsa
(serves 4)

Grilled salmon with avocado salsa
Ingredients
  • 2 lbs salmon, cut into 4 pieces
  • 1 tbs olive oil
  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • Avocado salsa
  • 1 avocado, peeled, seeded and sliced
  • 1 small red onion, sliced
  • 3 mild or hot peppers, seeded and deveined, diced or sliced
  • Juice from 2 limes
  • 3 tbs olive oil
  • 2 tbs finely chopped cilantro
  • Salt to taste
Instructions
  1. Mix the salt, coriander, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix, and refrigerate for at least 30 minutes.
  2. Pre-heat the grill.
  3. Combine the avocado, onion, hot peppers, cilantro, lime juice, olive oil and salt in a bowl and mix well, chill until ready to use.
  4. Grill the salmon to desired doneness.
  5. Serve the salmon topped with the avocado salsa

Tasty Tuesday

Here is a great throw-in-the-blender breakfast or snack!
Ingredients:
-  1 cup quartered strawberries
-  1 sliced banana
-  1/4 cup raw almonds
-  1/2 cup raw oats
-  1 cup vanilla Greek yogurt
-  1 tsp. honey

Directions:
1.  Blend almonds and oats in a blender until finely chopped.
2.  Add strawberries, banana, Greek yogurt, and honey to the blender and blend until smooth.
3.  If you like a thinner smoothie add some almond milk until your desired consistency is reached.  Enjoy on the go or in your home!

Tasty Tuesday

It's time to fire up those grills!  Try this burger out!!

Turkey Burgers
Ingredients:
-  1 lb. ground turkey meat
-  1 medium red onion, finely chopped
-  1/2 cup fresh parsley, minced (or whatever fresh herbs you like)
-  1 tbsp. garlic powder
-  1 tsp. salt
-  1 tsp. pepper

Directions:
1.  Mix ingredients together and form 4 patties.
2.  Grill on medium heat for 7 minutes a side or until cooked through.  Serve hot.
3.  Top with your favorite burger toppings.  My personal favorite is romaine lettuce, tomato, reduced sugar ketchup, and mustard.  They are even great without a bun!

Tasty Tuesday


Here is a great recipe to liven up chicken!  Super easy and super tasty!!

Grilled Stuffed Chicken Italiano


Ingredients
  • 4 - 4 oz. chicken breasts
  • 4 roasted red pepper strips
  • approximately 20 baby spinach leaves
  • 4 String Cheese
  • light Italian dressing for basting
Instructions
Preheat indoor or outdoor grill to med-high.
  1. Butterfly the chicken breasts*
  2. Place about 5 baby spinach leaves in middle, slightly to one side.
  3. Put roasted red pepper, and String Cheese on top of spinach.
  4. Roll like a cigar, and put 1-2 toothpicks on ends to hold together well.
  5. Grill for 5 minutes, turn and grill 5 more minutes. Check for doneness and turn again if needed, until cooked through (10-15 minutes depending on you grill and thickness of chicken).
  6. Serve as is or slice to ensure chicken is fully cooked.
