Tasty Tuesday

Here is a super-quick meal that you can put together with 3 ingredients.  It's a great way to lighten up an old favorite--Sloppy Joes!




Ingredients
  • 1 – 1½ pounds ground turkey
  • 1 can Hunt’s Manwich sauce, any flavor
  • 1 head of butter lettuce or romaine lettuce
  • --You could also add your favorite veggies to the meat, like peppers, onion, etc.
Instructions
  1. Brown turkey in a pot or pan until cooked through.
  2. Add Hunt’s Manwich sauce and stir to combine. Allow mixture to heat up.
  3. Serve turkey sloppy joes on lettuce.

 Here is a great recipe that is super simple and definitely delicious!  A great snack to make ahead to take with you to work or to enjoy at home!

 Healthy Nut Snack Mix
Paleo Snack Mix is salty, smoky and garlicky like traditional snack mix. #paleo #glutenfree #dairyfree
Ingredients
Instructions
  1. Preheat oven to 325 degrees.
  2. Combine nuts in a large bowl and toss with olive oil until well coated.
  3. Combine salt and spices in a small bowl. Sprinkle over nuts and stir until well combined.
  4. Spread nuts in single layer on baking sheet. Bake 15-20 minutes or until lightly browned and crispy.

Tasty Tuesday

I thought this fresh salad would help us get through this winter!!  It reminds me of warmer weather!

Zesty Lime Shrimp and Avocado Salad
Servings: 4 • Serving Size: 7/8 cup •
Calories: 210.4 • Fat: 9.2 g • Protein: 25.1 g • Carb: 7.8 g • Fiber: 3.6 g • Sugar: 0.6

  • 1 lb jumbo cooked shrimp, peeled and deveined, chopped*
  • 1 medium tomato, diced
  • 1 hass avocado, diced
  • 1 jalapeno, seeds removed, diced fine
  • 1/4 cup chopped red onion
  • 2 limes, juice of
  • 1 tsp olive oil
  • 1 tbsp chopped cilantro
  • salt and fresh pepper to taste

In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.


Makes 3 1/2 cups.

Tasty Tuesday


Baked Pesto Chicken Parmesan has just 4 ingredients, takes 5 minutes to prep, and bakes in 30 minutes! | iowagirleats.com

Ingredients
  • 1lb boneless skinless chicken thighs, about 8 (could use chicken breasts pounded thin then cut in half)
  • salt & pepper
  • 1/3 cup pesto
  • 1 cup marinara sauce
  • 8oz fresh mozzarella cheese, sliced
Instructions
  • Preheat oven to 400 degrees. Season chicken thighs with salt and pepper then add to a 8×8″ or 9×12″ baking dish. Add pesto then use hands to evenly coat. Spoon marinara sauce over top of thighs followed by mozzarella cheese then cover tightly with foil and bake for 20 minutes. Remove foil then bake for 10 more minutes, or until chicken is cooked through and cheese is golden brown and bubbly.
