Tasty Tuesday

Here is one super simple and yummy recipe.  In fact, I just made a batch this past weekend.  I make one with just the apples for my boys and then add some cinnamon to mine and my hubs' (I've also added some cooked down berries to a batch before too...really good!).  It really is SO simple!!  Hope you try it!







What You’ll Need

  • Crock pot
  • 8 to 12 apples
  • Juice of 1/2 lemon
  • Water
  • Knife and peeler

What To Do

  1. Put 1 cup of water and the juice of half a lemon in the crock pot.
  2. One at a time, peel* , core and slice each apple. Toss each one in the water with juice to reduce browning.
  3. Cover and cook on high, stirring every hour until it looks done.
  4. That’s it! You can either leave it “chunky” or you can puree it with an immersion blender, food processor or regular blender

No Bake Customizable Granola Bar Recipe


No Bake Granola Bars
Makes six granola bars (or nine small bars)
Ingredients
  • 1/2 cup nut butter
  • 1/2 cup honey
  • 1 cup old fashioned oatmeal
  • 1/2 cup ground flaxseed
  • 1/4 cup shredded coconut
  • 1/2 cup chopped nuts
  • 1/2 cup dried fruit
Directions
  1. Microwave nut butter and honey until warm, approximately 30 seconds. Stir together.
  2. Stir oatmeal into the nut butter and honey.
  3. Add coconut, dried fruit and chopped nuts. Stir in the ground flaxseed.
  4. Press the mixture into a pan sprayed with cooking spray and freeze for 45 minutes.
  5. Cut into bars and enjoy. Store remaining bars in the refrigerator.

Parmesan Honey Sweet Potato Chips

Salty: Honey Sweet Potato Chips: Nothing tastes better than a paper-thin chip smothered in some sort of cheesy goodness. These honey sweet potato chips will give you the crunch without the guilt factor. Source: Flickr user Yelena Strokin
Ingredients
2 small sweet potatoes or 1 large sweet potato
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp paprika
1 tbsp honey
1/4 cup shaved parmesan
drizzle of extra virgin olive oil
freshly ground pepper

Pre heat oven to 375 degrees.  Start to peel potato into strips and keep going.  (I used a medium sized mixing bowl for the potato peels which I recommend because it was easy to then mix all the seasonings and potato peels in).  Now add in the olive oil, garlic powder, salt, pepper, paprika, honey and parmesan.   Mix together with your hands until evenly coated.  Line a baking sheet with parchment paper and spread the sweet potato peels on the sheet.  Bake for 20-25 minutes till crispy.
