Tasty Tuesday
Pumpkin Pie Protein Overnight Oats
½ cup (120g) plain nonfat Greek yogurt
½ cup (122g) pumpkin purée
¼ cup (25g) old-fashioned oats
1 tbsp (12g) Truvia
¼ tsp ground cinnamon
1.Add all of the ingredients to a mason jar or plastic
container with a tight-fitting lid, and stir until thoroughly combined. Cover
and refrigerate for 8 hours or overnight. Serve cold.
*Any sweetener will work

Tasty Tuesday
Roasted Cauliflower Rice
Ingredients
- 1 Head Cauliflower
- 1 Tbs Olive Oil
- 1 tsp Granulated
Garlic
- Salt and Pepper
to Taste
Instructions
- Preheat your
oven to 400 degrees.
- Roughly chop
cauliflower and place all pieces in the blender.
- Fill your
blender with water all the way above the cauliflower or to your max fill
line.
- Pulse blender a
few times until you no longer see any large pieces of cauliflower.
- Pour cauliflower
into a strainer to drain all the water.
- Spread the
cauliflower on a cookie sheet and drizzle olive oil over the top.
- Sprinkle your
granulated garlic and salt and pepper on top and mix it all up with a
spatula.
- Bake for 15-20
min. If you like it crispy (i do) flip the rice and continue cooking
another 5-10 min.
- Remove from oven
and enjoy immediately!
*This would be yummy for a stir fry instead of the “fried
rice” in many recipes!

Oven-roasted Chicken and Veggies
Prep Time: 15 min Cook Time: 15 min
Serves 4
Ingredients
- 2
large boneless skinless chicken breasts
- 1 red
bell pepper
- 1
green bell pepper
- 1
yellow bell pepper
- ½
small red onion
- 1
medium zucchini
- 1 cup
broccoli florets
- ½ cup
grape tomatoes, sliced in half
- 2
tablespoons olive oil
- ½
teaspoon salt
- ½
teaspoon black pepper
- 2
teaspoons Italian seasoning
Instructions
1.
Preheat oven to 475° F. Spray a large baking
sheet with cooking spray.
2.
Chop all the veggies into large pieces. On a
separate plate or cutting board chop all the chicken in large cubes.
3.
Place the chicken and veggies on the prepared
baking sheet. Add the olive oil, salt, pepper and Italian seasoning. Toss to
combine.
4.
Bake for 15 to 20 minutes or until the veggies
are charred and chicken is cooked through.
5.
Serve immediately and enjoy!

It's September so that means Pumpkin EVERYTHING! Here is a great energy bite recipe using pumpkin...yumm-o!
Pumpkin Pie Energy Bites
Ingredients
- 1 cup pitted Medjool dates
- 1/2 cup pecans
- 1/3 cup pumpkin puree
- 1/4 cup unsweetened coconut flakes
- 2 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- Pinch of salt
Instructions
- Place the dates into a small bowl and cover with water. Let soak for 10 minutes, then drain.
- Place the pecans into a food processor and pulse until finely ground. Add in the rest of the ingredients, including the soaked dates. Pulse until combined. Adjust the spices to taste. Place into the refrigerator for 30 minutes to chill.
- Use your hands to form the dough into small balls. Store in the refrigerator in an airtight container.

- Servings: 16 balls
