Tasty Tuesday
Why not continue the theme this month by giving you another
pumpkin recipe. Who could ever get sick of pumpkin this time of year
anyways?! Today I have a pumpkin pancake recipe that is sure to be a hit
at your next Sunday breakfast!
Ingredients:
- 6
eggs
- 3/4
cup canned pumpkin (not pumpkin pie filling)
- 1
1/2 tsp. vanilla extract
- 1
1/2 tsp. pumpkin pie spice
- 1
1/2 tsp. cinnamon
- 3
tbsp. coconut flour
- 1/4
tsp. baking soda
- 1
pinch salt
- 1
tbsp. coconut oil
Directions:
- In
a large mixing bowl, whisk eggs, pumpkin, and vanilla. Sift pumpkin
pie spice, cinnamon, coconut flour, baking soda, and salt into wet
ingredients. (Or combine all ingredients in a food processor until
well mixed).
- 2.
Grease a skillet with 1 tsp. coconut oil and spoon in batter to make
pancakes of your desired size. Allow pancakes to cook for about 3
minutes. When a few bubbles appear, flip pancakes to finish cooking
for another 3 minutes.
- 3.
Top your pancakes with nut butter, bananas or other fruits, vanilla yogurt,
and nuts if desired!
