Tasty Tuesday
Hawaiian Turkey Burgers Recipe:
(Makes 4 burgers)
Ingredients:
1 pound lean ground turkey (aim for ground turkey breast)
1/2 cup dry bread crumbs
1/4 cup green bell pepper, minced
1/2 cup thinly sliced green onion
1/2 teaspoon ground ginger
1 small can pineapple slices, reserve juice
1/2 teaspoon salt
4 slices Swiss cheese
Teriyaki Sauce (I use Kikkoman)
Light mayonnaise
Hamburger buns
Directions:
In a mixing bowl, combine turkey, bread crumbs, pepper, onion, ginger, 1/4 cup reserved juice from pineapple and salt. Divide turkey mixture into 4 equal parts and form into patties. Grill, broil or cook in a frying pan over medium until cooked through. The last few minutes of cooking, place pineapple over heat to grill. Place a slice of Swiss cheese on top of each patty when warm. Spread Teriyaki sauce and light mayonnaise on buns and top with burgers and pineapple.

Summer is a great time to bring that Crock-Pot back out! No heating up the house and this breakfast will be ready for you in the morning!
Slow Cooker Banana Nut Oatmeal
Slow Cooker Banana Nut Oatmeal
Ingredients
- 1 cup steel cut oats
- 1 ripe banana - mashed
- ¼ cup chopped walnuts
- 2 cups skim milk (or almond milk)
- 2 cups water
- 2 tablespoons flax seed meal
- 2 teaspoons cinnamon
- 1 teaspoon vanilla
- ½ teaspoon nutmeg
- ½ teaspoon salt
- banana slices, walnuts or brown sugar - optional garnish
Instructions
- Place all ingredients in slow cooker and stir until well combined.
- Cook overnight on Low for 8 hours.
- In the morning, stir oatmeal with a fork to loosen the steel cut oats and make sure everything is fully incorporated.
- Serve warm with banana slices, chopped walnuts or a pinch of brown sugar if you wish.
Notes
For easier clean-up and to avoid the slight "crusty" residue inside the slow cooker, place all ingredients in a glass bowl that fits into the slow cooker then add enough water to fill the lower half of the slow cooker. Cover and cook on low for 6 to 8 hours.

In keeping with the summer-weather appropriate recipes, here's a great one from Iowa Girl Eats that everyone in your family will love!
Ingredients
1/2 cup milk (I used unsweetened vanilla almond breeze)
4-6oz vanilla Greek yogurt (1 individual-sized container)
1/2 cup frozen blueberries
1/2 frozen banana (or a whole banana if you like your smoothies sweeter)
1/4 cup raw, uncooked oats
1/4 teaspoon lemon zest
1/2 cup ice cubes

- Add ingredients to blender in the order listed above then blend until very smooth, about 2 minutes

Here is a great grilled veggie recipe that will amp up any summer time meal!
INGREDIENTS
3 yellow squash, sliced lengthwise into 1/2-inch thick strips
3 small eggplant, sliced lengthwise into 1/2-inch thick strips
1 bunch (1-pound) asparagus, trimmed
You can also use zucchini, bell peppers, onions or other vegetables of your choice.
Dressing:
1/4 cup plus 2 Tablespoons olive oil
Salt (to taste)
Freshly ground pepper (to taste)
3 Tablespoons lemon juice
2 teaspoons minced garlic
Chopped herbs and seasoning blend of your choice. (In this recipe we used a citrus seasoning blend and thyme.)
DIRECTIONS
- Place a grill pan over medium-high heat or prepare the barbecue.
- Brush the vegetables with 1/4 cup of the oil until coated lightly.
- Sprinkle the vegetables with salt and pepper.
- Working in batches, grill the vegetables until tender and lightly charred all over (about 7 minutes for the yellow squash and eggplant and 4 minutes for the asparagus) Note: The key to getting those great grill marks is to not shift the vegetables too frequently once they’re placed on the grill.
- While the vegetables are grilling, whisk the remaining 2 tablespoons of oil, lemon juice, garlic, and thyme in a small bowl with salt and pepper (to taste).
- Arrange the grilled vegetables on a platter.
- Drizzle the herb mixture over the vegetables.
